Wine 1: Taupenot-Merme Chambolle-Musigny 2021

Region:Chambolle-Musigny, Burgundy, France

Grape Variety: 100% Pinot Noir

Winemaking: 100% destemmed, long cold soak, aged in 25% new oak barrels.

Key Aroma/Flavor Word:   

Extremely delicate, fine-boned and ethereal, with explosive strawberry and floral on the nose, rounded fruit on the palate with a touch of fresh herbs, pepper and spice.

About the Bottle 

Winemaker Romain’s ancestors had been growing grapes for over 300 years and he prefers to focus on work in the vineyard while practicing “lazy-winemaking” emulating methods championed by Henri Jayer.

The grapes are sourced from Les Bussières, La Taupe – these two lieux-dits have soil mixing clay and limestone and the vines over 50+ years old – a combination that makes the grapes better resist heat waves and allows for the traditional elegant side of Chambolle to shine. The result is quintessential Chambolle, deceptively light, with stunning balance and poise, always managing to pack in the substance.

Serving Recommendation 

Cellar Temperature, 58-60F. No need to decant but let it unwind in a Burgundy glass. Pair with Fire Roasted Quail, Quiche Lorraine, Gougeres, crispy pork belly.

Wine 2: Mayacamas Mount Veeder Cabernet Sauvignon 2019

Region: Mount Veeder, Napa Valley, USA

Grape Variety: 100% Cabernet Sauvignon

Winemaking: Fermented in concrete (65%) and stainless steel (35%), aged 20 months in large format foudre (10HL-45HL) and 14 months in neutral French oak barrique

Key Aroma/Flavor Word:   

Lilac, dried sage, bay leaf, graphite, wild blueberry, maraschino cherry, blackberry, mocha, rich with fine tannins.

About the Bottle 

“The last classic mountain Cabernet of California”. 

This is arguably the original Cult wine of California – still offers extraordinary quality starting with exceptional fruit from high elevation vineyards.  

The wines from this producer have a magic ability to hold onto their fresh fruit while developing untold layers of flavors enmeshed in waves of tannins and well-integrated oak.  Bottles from the late sixties and early seventies are still going strong and show no sign of fading.  While young, these wines respond very well to decanting – the admiration of their future potential easily coincides with their current enjoyment.

As always, this 2019  deservedly earned high scores: Vinous 97, Jeb Dunnuck 96, Wine Spectator 96

Serving Recommendation 

Cellar Temperature. 60F. 2 hours decanting is recommended.  Pair with Beef, especially grass-fed New York Strip, Venison backstrap, 10+ year aged-cheddar, lamb skewers.
