Wine 1: By Farr “Irrewarra” Pinot Noir 2019

About the Bottle 

As one of Australia’s most respected Pinot Noir and Chardonnay producers, By Farr focuses on cool-climate expressions of Burgundian varieties from Victoria, Australia. Irrewarra (meaning "long spear throw" in the local Aboriginal language) is an exciting vineyard showcasing Nick Farr’s refined winemaking style, which emphasizes structure, elegance, and purity of fruit. Now at its peak drinking window at six years old.

Serving Recommendation 

Cellar temperature (55-58F). No need to decant and ready to enjoy, pair with Charcuterie board, aged cheese, roast duck, char-siu, yakitori skewers, mushroom with oyster sauce.

Wine 2: Terre Nere “Anniversario” 2022

Grape Variety: 100% Nerello Mascalese

Winemaking: volcanic, rocky soil, aged in 10% new French oak for 14 months

About the Bottle 

A pioneer of Etna wines, Tenuta delle Terre Nere has put Sicilian reds on the global stage. This limited 20th-anniversary bottling from the Bellacolonna subplot of the Calderara Sottana vineyard is a beautiful, mineral driven, floral and juicy red wine with silky tannins, making it an ideal introduction to fine Sicilian wines.

Serving Recommendation 

Cellar temperature (58-60°F). Decant for 30 minutes. Wide range of pairing with roast chicken, lasagna, Cantonese roast pork belly, short ribs, grilled mushrooms, roasted eggplant, black olives, and even meatier fish.

Wine 3: Mayacamas Mount Veeder Merlot 2021

Winemaking: aged in neutral French oak 45HL foudre (12 months) and 225L barrel (8 months)

About the Bottle 

A true Napa Valley classic, Mayacamas Merlot is an exceptional value –at a fraction of the price of the estate’s flagship Cabernet Sauvignon (Winter 2024 Majestic Duo). It delivers the similar balance of power and finesse, staying true to the estate’s iconic old-school winemaking style. While approachable now, its structure and depth promise graceful aging over the next decade or more. While young, these wines respond very well to decanting – the admiration of their future potential easily coincides with their current enjoyment.

Serving Recommendation 

Cellar temperature (60°F). Decant for at least 1 hour. Pair with grilled red meats, especially New York Strip and filet mignon, Korean BBQ, aged-Gouda, sharp cheddar, or mild blue cheese.
