Wine 1: Jean-Michel Guillon Gevrey-Chambertin 1er Cru Champonnets 2015

About the Bottle 

A first generation vigneron in Gevrey-Chambertin, Jean-Michel Guillon quickly gained recognition for his powerful and expressive style from top sites in the Côte de Nuits. He has a love for destemming and generous new oak usage, that are managed with exceptional craftsmanship, resulting in wines with great depth, concentration, and aging potential. 

As Allen Meadows (Burghound) notes, Guillon "retains a clear sense of style and grace while preserving the identity of Pinot Noir." Now at 10 years of age, this wine is starting to drink beautifully but has the structure to age further.

Serving Recommendation 

Cellar temperature 58-60F. Decant for 30 minutes and pair with rich, saucy dishes, grilled meat such as veal, beef, lamb, duck or game meat. Wild mushroom dishes, rich pasta, or Mole are also excellent options.

Wine 2: Terre Nere “Prephylloxera” Etna Rosso 2022

Winemaking: matured in French oak for 16-18 months

About the Bottle 

A pioneer of the region that put Etna / Sicilian red wine on the global stage, Terre Nere is known for wines that highlight the unique volcanic soils and high-altitude vineyards of the region. This exceptional and highly limited wine comes from the estate’s most renowned pre-phylloxera vineyard, planted before 1881 and spanning just 0.8 hectares. With its complex aromatics, refined tannins, and Burgundian-like finesse, this wine represents the highest level of elegance and terroir expression from the Etna region.

Serving Recommendation 

Cellar temperature 58-60F. Needs to age but if drinking now, decant for an hour and sip slowly with plenty of time planned. Pair with roast chicken and pork, grilled meat, wild game, mushroom pasta, or aged cheese.
